Overview

  • Dan Winans joined The Hospitality Management Department as a Lecturer in the fall of 2007. He brought two decades of food-system and food service experience as well as significant international knowledge. Dan joined the university wide committee working to add more sustainable food studies to the UNH curriculum. Out of this committee came a proposal for a new, first of its kind, dual major in EcoGastronomy. In June of 2008 the EcoGastronomy Dual Major completed the approval process and was made official by a vote of the USNH Board of Trustees. Dan was given the role of Founding Director and tasked with developing and implementing the dual major. He has grown the dual major into an impactful program that serves students from all colleges and has graduates working on five continents.

    EcoGastronomy is a discipline that looks at food from farm to fork as well as the myriad of social, social justice, political, economic, ethical, health, and nutritional issues associated with food production and eating. A lens of sustainability is applied to this view of our food system throughout.
