Charlie is an alumna of the University of New Hampshire, with a B.S. in Hotel Administration, who has spent the past 34 years at the University as a professor in the Culinary Arts program at the Thompson School of Applied Science. During the summer months, Charlie owned his own restaurant for ten years but for the past 25 years has been an executive chef at notable restaurants on the southern coast of Maine. As a member of the American Culinary Federation and certified culinary educator of the American Culinary Federation, he believes that if one is going to teach in the culinary and management field, one must actively live it daily in order to remain up to date in this ever changing field. Charlie’s main area of teaching interest is in food and food preparation with an emphasis on using fresh New England fish and shellfish. Beginning in the fall of 2019, Charlie will join the faculty in the Nutrition program where he will be teaching required courses in culinary arts and food service management.
